Ghee being the pure fat from butter is an essential part in Ayurvedic cuisine. It balances the Pitta and Vata doshas. Used in small amounts it stimulates the digestive fire.
WHAT IS GHEE?
Ghee is a form of clarified butter and could also be called as pure butterfat since milk solids and water have been removed . To make ghee, butter is melted and simmered in a pot or saucepan until the layers separate. On top forms a foamy, watery layer which is skimmed off. On the bottom of the pot accumulate the milk solids that should remain in the pot when the middle part, the butterfat, is poured into jars.
Ghee is also often used in religious ceremonies and various healing arts in Indian culture.
Ghee has a long shelf-life and needs no refrigeration if kept in an airtight container to prevent oxidation. The texture, color and taste of ghee depends on the quality of the butter and the duration of the boiling. | | | |
